{My Recipe For The Day}



Well I am going to be working so I am making chili for my guys, and I have an easy recipe and I don't like using packaged mixes because they have msg, and to much salt |Husband is highly sensitive to salt|
So I choose red beans and soaked them overnight, rinse and add water to cover

1 onion cut in good size chunks
6 cloves garlic chopped slightly |no need to fuss|
2 tbsp olive oil
I sauteed these until caramelized, then add to the beans while they cook to infuse flavors
Cook for 2 hours, boil beans gently and stir very little to prevent breaking of skins, add water as necessary Do Not Drain |Hint|
I will brown 2 lbs lean burger, drain to add to beans, to this I will add these spices
1 tsp of dry cumin
1 tsp dry chili powder
1 tsp dry garlic granules
1 tsp dry minced onion
1/2 tsp salt
1/4 tsp pepper
1 large can of diced tomatoes
1 8 oz can of tomato sauce |no salt|
After beans are tender I add the burger, spices, tomatoes and tomato sauce and simmer for about 15 minutes on very low, again stirring slightly to prevent breaking of skins.

Variations
| Variation Just before serving I will add a can of diced green chilies |
| Serve with your favorite crusty bread or crackers| Top with grated cheese
| Add 1/2 medium chopped green pepper with onion and garlic|
| Use leftovers on chips to make nachos|
| Husband uses them in his breakfast added to scrambled eggs, delish

  14. I love to serve homemade chili with Megas. Cut 10 to 12 corn tortillas into 1 inch squares. Saute in about 2-3 Tbls. of oil with 1/2 cup of diced onion and 1 tsp. garlic powder. Saute until onion is translucent. Add two lightly beaten eggs, mix and continue to cook until eggs are set. Sprinkle 1/2 cup of sharp cheddar on top. Turn off heat and cover until cheese is melted. I like to include one jalapeno with the onion for a little kick. The combination is delicious.
