Lemon Pound Cake
Ingredients:3 cups all-purpose flourInstructions:
1 TBSP. baking powder
1 tsp. salt
1/4 tsp. nutmeg,
1 cup butter flaoved shortening
2 cups white sugar
3 eggs, 1/2 cup ricotta cheese
1 lemon zested
1 tsp. vanilla extract
1 1/2 tsps lemon extract
1 cup milk
Preheat oven to 350o F.
Grease and flour a 10 inch tube pan.
Sift together the flour, baking powder, salt and nutmeg.
Set aside.
In a large bowl, cream together the shortening and sugar
until light and fluffy. Beat in the eggs one at a time. Stir in
ricotta cheese, lemon zest, vanilla and lemon extract.
Beat the flour mixture alternately with the milk, mixing just
until incorporated. Pour batter into a prepared pan.
Bake in the preheated oven for 45 to 50 minutes, or until
a toothpick, inserted into the center, of the cake comes
out clean.
Let cool in pan for 10 minutes.
Turn onto wire rack to cool.
